Traditional Recipe - Braġjoli


Maltese traditional cuisine can be very tasty, and one favourite dish is Braġjoli . Also known as ‘beef olives ’, the dish features slowly braised, stuffed, bundles of beef.

Ironically, there are no olives at all in the recipe The name derives from the form of the cooked dish, which is said to resemble the shape of an olive However you refer to them, rest assured that they are delicious!
We hope you’ll enjoy this traditional and hearty recipe, which can be served as a multi course meal, serving the meat sauce over spaghetti as a delicious starter


Braġjoli Ingredients

• 6 thin slices of meat (minute steaks)
• 600g of minced beef (you also use a mix of half beef and half pork mince)
• 2 bacon rashers (optional)
• Crushed garlic and finely chopped parsley
• Grated parmesan (or similar)
• 2 eggs, beaten
• 2 hard boiled eggs

• Olive oil
• 2 large onions, diced
• 5 cloves garlic, crushed
• 1 tin of tomatoes
• 1 cup leaf parsley, leaves picked
• Marjoram and a few bay leaves
• 250ml red wine and 500ml water
• 1 OXO cube (optional)
• Salt and pepper to taste
• Sliced potatoes


Braġjoli Preparation

Sauce :

Step 1 Start with the sauce chop and fry the onions and garlic in olive oil, until softened and golden
Step 2 Add tomatoes, herbs, red wine and water and leave to simmer

Step 1 Lay out the beef slices
Step 2 Mix the remaining ingredients together and season with salt and pepper
Step 3 Place a heaped tablespoon of stuffing mixture on each beef slice, spreading out well and placing half a boiled egg in the middle
Step 4 Roll up the meat slice, and secure it with a toothpick (or tie with butcher's twine)
Step 5 Place the braġjoli in the sauce and simmer for 1 ½ hours over low heat
Step 6 Add some peas to the sauce and simmer again for an additional 15 minutes

For starters, serve your sauce over a plate of spaghetti, followed by a main course of braġ joli, served with patatoes and seasonal veg
